Cucumber Honey Mimosa

• 3 Small Cucumbers
• 1 Cup of Honey
• Cucumber Slice
• Champagne

Combine one cup of honey with one cup of boiling water to create honey simple syrup. Stir until dissolved. Place in fridge. Peel 3 washed cucumbers, slice then puree them in a blender, press the cucumber puree through a coffee filter to extract the cucumber water. Set aside. Pour 3/4 oz of honey simple syrup and 1 1/4 oz of cucumber water into a champagne flute. Top with Champagne and garnish with a cucumber wheel.
